Mother's Day Cake Idea

As we all know Mother's Day is just around the corner on 11th March and what better way to show your mum just how much she means is with something home-made, we think.  Now I don't know about you but I like to do a test run first, so I thought I would share with you the recipe I will be trying for my mum this year!  This recipe was shared by my lovely friend who makes the best cakes ever, so the pressure is on!

Once I get started I do actually love to bake.  I find it quite therapeutic, watching something come from nothing and fingers crossed, tastes just as good.   Of course the best thing about doing the test run, is you get to enjoy the final result twice :)

So lets kick off our Mother's Day masterpiece... no ordinary Victoria Sponge I say!

The great thing about a victoria sponge is that you more often than not, have all the ingredients in your cupboard.

 

For the recipe you will need :

100g (4oz) Butter, softened

100g (4oz) Caster Sugar

2 Eggs

100g (4oz) Self raising flour, sifted

45ml, (3tbsp) jam

icing sugar sifted, optional

For the decoration you will need :

Mini meringues shells

Dreamy clouds of meringue melting moments from Waitrose

Roses

Double Cream

Icing sugar

Strawberries or any fruit you prefer

Vanilla Extract

So let's begin....

  1.  Prepare two 18cm (7 inch) sandwich tins
  2.  Cream the butter and sugar together
  3.  Beat in the eggs, one at a time adding 15ml of the flour with each one
  4.  Gently fold in remaining flour with a metal spoon
  5.  Transfer to the cake tins
  6.  Bake at 180 C (350F) Mark 4, For 25-30 mins or until well risen
  7.  Leave in the tins for 2-3 mins and then turn out onto a wire rack
  8.  When cold we can decorate

For the icing... I started with one batch but if you want more than just double it

  • 200ml (7fl oz) double cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla

Then onto the fun bit and decorate.

 

 

Now we know mum's don't have favourites... I have a brother and a sister but i'm sure this mother's day i'm going to score big brownie points don't you think!
